Obituary of Carol Parillo

Carol A. Parillo, 88, died peacefully at home in Millington, NJ, on Wednesday, February 25.

 

A funeral mass will be held on Monday, March 16, at 10 AM at St. Rose of Lima Church, 50 Short Hills Avenue, Short Hills, NJ.

 

Carol was born Carolyn Feleppa in Summit, NJ, and grew up in Summit and Short Hills. She attended Oak Knoll School, and later went to Dunbarton College in Washington, D.C. Like many young women of her day, she received a degree from the Katharine Gibbs secretarial school, and would forever dazzle her family with her fierce typing skills and ability to transcribe flawlessly without looking at the keyboard.

 

Carol married Albert M. Parillo in 1960, and together they had four children, living briefly in Murray Hill and then in Short Hills. In 2005, in their retirement years, Carol and Albert moved to Millington.

 

In the 1980s, Carol worked as an administrative assistant at Overlook Hospital, and in the 1990s and early 2000s she taught English classes (ESL) at SAGE in Summit. Carol relished her role as a teacher, and developed close nurturing relationships with her students.

 

Carol was warm, supportive, smart, and wickedly funny, never passing up the opportunity to laugh. She cherished traveling with her husband and spending time with friends and family, including her beloved granddaughter. Carol’s delicious cooking delighted and inspired anyone she ever fed. Her pizza, chicken cutlets, and other dishes would remain the gold standard for all who tried them.

 

She is survived by her children, Pam Carey, Sue Parillo, Karen Parillo, and Michael Parillo; her granddaughter, Zoe Cardiff; and her brother Richard A. Feleppa.

 

In lieu of flowers, the Parillo family would appreciate donations to the American Cancer Society.
